1 ea 12" flour tortilla
2 ea Corn tostadas
1/2 # Ground beef
1/4 tsp Salt
1/4 tsp Paprika
1/4 tsp Chili powder
1/4 tsp Onion powder
1/4 tsp Garlic powder
1/2 tsp Cumin
1 ea Canned green chiles
1/2 ea Small Onion, diced
1 ea Canned refried beans
1/2 c Shredded Cheese
Sour cream and/or salsa for serving
- In a hot skillet, add onion and cook until translucent
- Add chiles and ground beef
- When beef is mostly brown, add spices
- Mix well, finish browning and remove from heat
- To assemble, place tortilla on flat surface
- In middle of tortilla, place a layer of cheese approximately the size of the tostada
- Cover with tostada
- Smear refried beans on surface of tostada
- Add a layer of ground beef mixture
- Place second tostada on top
- Cover with a final layer of cheese
- Fold one tortilla edge to middle of the pile
- Hold in place and fold next section to center
- Repeat until you have folded the entire tortilla (6 edges)
- Place in hot skillet folds-down
- Flip once cheese has melted and folds are sealed
- Remove from pan when cheese on both sides has melted and tortilla is toasted
- Slice and serve with sour cream or salsa
