Short-Grain Rice

 300 g (~ 1 cup) short-grain rice


1. Wash rice thoroughly, changing out water until water runs clear

2. Allow rice to rest in water for 30+ minutes

3. Drain

4. Add soaked rice to sauce pan with water to a combined weight of 700g (~1 cup of water)

5. Bring sauce pan to simmer

6. Cover and reduce to low for 17 min

7. Remove from heat covered and let rest for 5 min

8. Turn/fluff rice with a spatula
